  • 250 gram(s) bulghar wheat
  • 65 gram(s) (21/2oz) fresh mint, chopped
  • 2  oranges, peeled and cut into segments
  • 1  red onion, finely chopped
  • Juice of 1 orange
  • 4 tablespoon(s) olive oil

Method

  1. Place the bulghar wheat in a bowl. Pour over enough boiling water to cover the grains, cover the bowl with clingfilm and leave to steam for 15 minutes. Drain and return to another bowl.
  2. Add the chopped mint, oranges, red onion, orange juice, olive oil and season well. Toss and serve.
