• 125 gram(s) (4oz) bulgur wheat
• 1 large ripe beef tomato, chopped
• 8  spring onions, chopped
• Half  cucumber, chopped
• 28 gram(s) pack of fresh mint, chopped
• 28 gram(s) pack of fresh parsley, chopped
• 2 tablespoon(s) olive oil
• 2 tablespoon(s) lemon juice
• 1 dash(es) chilli sauce

Method

1. Put bulgur wheat into a pan with 600ml/1 pint water. Bring to the boil and simmer for 10-15 mins, then drain and rinse through with cold water.
2. Put into a large bowl and add tomato, spring onions and cucumber. Reserve a few mint leaves, then add remainder along with parsley.
3. Season with 1tsp salt and plenty of freshly ground black pepper. Pour over olive oil, lemon juice and chilli sauce, then mix. Cover and chill. Sprinkle with reserved mint leaves to serve.
