  • 2 tablespoon(s) lemon juice
  • 1 teaspoon(s) soy sauce
  • 1 teaspoon(s) French mustard
  • 2 tablespoon(s) very finely chopped shallot
  • 1 tablespoon(s) finely chopped tarragon leaves
  • 5 tablespoon(s) olive oil
  • 1 teaspoon(s) pastis

Method

  1. Mix together in a bowl the lemon juice, soy sauce, French mustard, shallot, and tarragon leaves. Whisk in the olive oil and, if you have it, 1 tsp pastis.
  2. Divide the prawns between four plates, spoon some of the sauce over them and serve the rest separately. Recipe by Shona Crawford Poole
