Ingredients

  • 10 gram(s) English mustard
  • 1 teaspoon(s) salt
  • Quarter teaspoon(s) milled black pepper
  • 4  egg yolks
  • 750 ml vegetable oil
  • 2 teaspoon(s) lemon juice
  • 3 teaspoon(s) white wine vinegar
  • 2 tablespoon(s) water
  • 75 gram(s) chopped gherkins
  • 75 gram(s) chopped capers
  • 10 gram(s) chopped parsley
  • 75 gram(s) chopped shallots

Method

  1. Whisk the mustard, salt, pepper and egg yolks together in a bowl. Then, slowly pour in the oil while whisking well. As you keep adding the oil, you will need to mix in a little water as it may get too thick and curdle.
  2. Once all the oil has been added, mix in the rest of the ingredients and serve.
