Thai Pork with Noodles

• 2 tablespoon(s) olive oil
• Around 450g pork sausagemeat
• 1  lemongrass stalk, finely sliced
• ½ red chilli, deseeded and finely chopped
• 1  red onion, sliced into thin wedges
• 300 gram(s) pack pre-soaked noodles
• 3 tablespoon(s) Thai fish sauce
• Juice of 2 limes
• 2 tablespoon(s) light muscovado sugar
• 20 gram(s) pack fresh mint

Method

1. Heat the oil in a non-stick wok. Drop bite-size nuggets of sausagemeat into the hot oil and fry until golden. Do this in two or three batches.
2. Return all the sausagemeat to the wok and add the lemongrass, chilli and onion. Fry for a further 2-3min, then stir in the noodles, fish sauce, lime juice and sugar. Fry for 2min until heated through, then stir in the mint leaves and serve.
