• 1 tablespoon(s) sesame oil
• 1  red onion, finely chopped
• 1  red chilli, finely chopped
• 2 clove(s) garlic, crushed
• 500g/1lb 2oz minced turkey
• 1 teaspoon(s) chilli powder (optional)
• 11?2tbsp fish sauce
• juice of 1 lime
• 1 handful each fresh coriander, basil and mint, roughly chopped
• jasmine rice, to serve

Method

1. In a wok, heat oil, then add onion, chilli and garlic and stir-fry for 1 min. Add mince and cook for a further 5 mins, till no longer pink, and cooked through.
2. Stir in chilli powder (if using), fish sauce and lime juice, bubble for 2 mins, remove from heat and toss with herbs. Serve with jasmine rice.
