Tomato and Basil Sauce

• 1 tablespoon(s) oil
• 3  garlic cloves
• 500 gram(s) carton creamed tomatoes or passata
• 1  bay leaf
• 1 sprig(s) fresh thyme
• Salt and ground black pepper
• Caster sugar
• 3 tablespoon(s) chopped fresh basil

Method

1. Heat the oil in a saucepan, add the crushed garlic and fry for 30sec (cook it very briefly; if it browns it will taste bitter).
2. Immediately add the creamed tomatoes or passata, bay leaf and fresh thyme. Season to taste with salt and ground black pepper and a large pinch of caster sugar. Bring to the boil and simmer, uncovered, for 5-10min.
3. Remove the bay leaf and thyme, then add the chopped fresh basil and serve immediately.
4. SERVE WITH... Pasta or cooked meats such as lamb, pork or chicken.
