  • 700 gram(s) (11/2lb) beefsteak tomatoes
  • 1 bunch(es) spring onions
  • 6  oregano sprigs
  • sald and ground black pepper
  • a pinch caster sugar
  • 3 tablespoon(s) olive oil to drizzle

Method

  1. Slice the tomatoes and spring onions.
  2. Arrange a layer of tomatoes on a plate, then scatter a few spring onions, some oregano, seasoning, sugar and oil on top. Layer the remaining ingredients; cover and chill for 1-2hrs.
  3. PREPARE AHEAD Complete the recipe up to one day ahead, then cover and chill.
  4. TO SERVE Remove from the fridge 1hr before serving.
