2 bananas, peeled and sliced
250 gram(s) (9oz) pineapple chunks
2 passion fruit (optional)
chopped pecans, to serve (optional)
For the caramel sauce
25 gram(s) (1oz) butter
50 gram(s) (2oz) soft brown sugar
75 gram(s) (3oz) golden syrup
75 ml (3fl oz) double cream

In a small heavy-based saucepan, add butter, sugar and golden syrup, and melt over a low heat, stirring till all combined. Bring to the boil, then lower heat and bubble gently for 5 mins. Stir in cream and continue cooking till sauce is smooth. Allow to cool a little.
In a small bowl, mix bananas and pineapple. Halve passion fruit, if using, and scoop out seeds. Add to bowl, mix, then divide between serving bowls. Pour over sauce and top with chopped pecans, if using.
