Ingredients

  • 1  strawberries, sliced (optional)
  • 2  egg yolks
  • 1tbsp golden caster sugar (plus 3-4tbsp for topping)
  • 180ml/6fl oz double cream
  • 2 drop(s) vanilla extract
  • YOU WILL NEED:
  • 4  heart-shaped ramekins

Method

  1. Sit a few strawberries in bottom of ramekins, if using. Then add egg yolks and sugar to a bowl. Whisk till mixture thickens and becomes creamy.
  2. Heat cream in a pan, but do not let it boil. Then add vanilla extract and let it cool for 5 mins. Slowly add cream to egg mixture, whisking as you go. When all added, pour back into pan and cook over a low heat, stirring continually. Again, do not let mixture boil.
  3. Pour custard mixture into ramekins and leave to cool completely for a couple of hours, or overnight in fridge, if time. Spoon a generous amount of sugar over each one to cover, then put under a hot grill till it turns golden and starts to bubble, or use a cook's blowtorch to caramelise top. Leave for about 15 mins or till hard before serving.
  4. TIP Choose your favourite fruit to put at the bottom of the puddings or serve it just as it is. Heart-shaped ramekins can be found at good cookshops.
