Warm orange and pomegranate salad with spiced syrup

• 175 gram(s) golden caster sugar
• 2  cinnamon sticks
• 10  cardamom pods, bruised
• 2  cloves
• 4  black peppercorns
• Finely shredded zest and juice of 1 orange
• 4 large oranges
• Seeds from 1 pomegranate
• 50 gram(s) pistachios, finely chopped

Method

1. To make the syrup, place the sugar in a saucepan with 275ml (9½fl oz) water, the cinnamon sticks, cardamom pods, cloves, peppercorns, orange zest and juice and bring to the boil, stirring to dissolve the sugar. Boil for 10-12 minutes. Remove from the heat and allow to stand for 10 minutes; strain and keep warm.
2. Peel the oranges and slice into 1cm (½in) thick rounds. Divide among 4 warmed plates and drizzle over the warmed spiced syrup. Scatter over the pomegranate seeds and chopped pistachios and serve.
