Ingredients

  • 300g (11oz)  finely sliced unpeeled fresh root ginger
  • 225g (8oz)  caster sugar
  • 6  whole cloves
  • zest and juice of 1½ lemons
  • about 600ml  cold water
  • 1 litre (1¾ pint)   soda water
  • Fresh mint leaves

Method

  1. Put ginger into a pan with caster sugar, cloves and zest and juice of lemon. Add about 600ml (1pint) cold water to cover. Heat gently to dissolve sugar, then turn up heat and simmer for 10min.
  2. Strain through a fine sieve into a jug. Allow to cool for 10min, then top up with soda water. Garnish with mint leaves.

Tips & techniques

Get ahead: Make syrup up to three days ahead. Chill. Add soda to serve.
