Ingredients

U.S. U.K. Conversion chart
  • 4 tablespoon(s) grenadine
  • 50 gram(s) caster sugar
  • Juice and finely grated zest of 1 lime
  • 1  small-medium watermelon
  • Fresh mint leaves, to garnish

Method

  1. Place the grenadine, sugar and lime juice with 100ml (4fl oz) water in a small saucepan and bring to the boil. Reduce heat and simmer for 6-8 minutes until thick and syrupy. Remove from the heat and allow to cool.
  2. Using a sharp knife, halve the watermelon then slice the rind from the bottom of each half. Lay the halves on a cutting board and, working from top to bottom, trim the rind from the flesh in 4 cuts, creating 2 large squares. Cut each square into equal, bite-sized cubes and pile on a plate to form a large, neat cube.
  3. Gently drizzle over the cooled grenadine syrup, scatter over the lime zest, chopped mint leaves and serve. Photographs Peter Cassidy; food styling and recipes Sunil Vijayakar; prop styling Helen Trent
