Welsh rarebit

• 25 gram(s) (1oz) butter
• 150 ml (1?4 pint) brown ale
• 175 gram(s) (6oz) mature Cheddar cheese
• 25 gram(s) (1oz) flour
• 2 teaspoon(s) English mustard
• generous splash of Worcestershire sauce
• 2  egg yolks
• 2 slice(s) farmhouse white or brown loaf

Method

1. Preheat grill to high. In a saucepan, add butter, brown ale and cheese, and cook gently till it melts. Remove from heat and stir in flour with a wooden spoon till smooth. Put back on heat and cook for a few more mins, stirring continuously. Top up with a little more brown ale if it is too thick, or use a drop of milk.
2. Remove from heat and stir in mustard, then season well with sea salt and freshly ground black pepper. Leave to cool then stir in eggs.
3. Toast bread on one side, then spoon cheese mixture onto untoasted side and put under a hot grill till bubbling and golden. Serve with some more Worcestershire sauce over the top or a spoonful of chutney.
