Ingredients

  • 125g/4oz soft butter
  • 75g/3oz icing sugar, sifted
  • 1 teaspoon(s) vanilla extract
  • 1?2tsp freshly grated nutmeg
  • 125g/4oz all-purpose wheat-free flour
  • 125g/4oz rice flour
  • 100g/ 31?2oz brazil nuts, roughly chopped
  • You will need: a well-greased baking sheet

Method

  1. Preheat oven to gas mark 2/ 150°C (140°C in a fan oven). In a bowl, add butter and icing sugar and beat with an electric whisk till light. Add vanilla extract and nutmeg and mix well. Whisk in flours with 1tbsp water till well combined, then add brazil nuts and draw mixture together with your hands to form a dough. Wrap in clear film and chill for 30 mins.
  2. Roll a walnut-sized piece of mixture into a ball, place on baking sheet and flatten gently to a thickness of about 1cm/1?2in. Repeat, spacing balls 2.5cm/1in apart as you add them to baking sheet. Place in oven and cook for 25-30 mins till very lightly golden. Leave to cool on baking sheet for 5 mins before transferring to a cooling rack.
