SHE Chocolate mousse

Ingredients

  • 65 gram(s) (2½oz) dark chocolate, broken into small pieces
  • 6 tablespoon(s) Irish cream liqueur of your choice
  • 25 gram(s) butter, softened
  • 3  eggs, separated
  • 4 tablespoon(s) caster sugar
  • 75 ml (5tbsp) whipping cream
  • Chocolate curls, to garnish

Method

  1. Melt the chocolate with the liqueur in a heatproof bowl over a pan of simmering water (the base should not touch the water). Remove from heat and stir in butter. Set aside for a few minutes before stirring in the egg yolks, one at a time.
  2. In a clean bowl, whisk the egg whites until stiff. Gradually add the sugar, 1tbsp at a time. Stir quarter of the mixture into the chocolate to loosen it. Then fold in the rest with a metal spoon.
  3. Spoon the mixture into 4 chilled dessert glasses and chill for 3-4 hours. Before serving whip the cream into soft peaks, spoon over each mousse and garnish with chocolate curls. Photographs Peter Cassidy; food Sunil Vijayakar
