Ingredients

U.S. U.K. Conversion chart
  • 150g (5oz) baby leaf spinach
  • zest of ½ lemon
  • 2tsp extra virgin olive oi
  • salt and freshly ground black pepper

Method

  1. Wash the leaf spinach, then tip into a pan and cover with a lid. Cook over a low heat for 3-4min until wilted, drain thoroughly, then add the zest and olive oil. Season and toss to coat evenly. Serve immediately.
  2. 60cals, 6g fat (1g saturates), 1g carbs(1g total sugars) per serving; serves 2
