Wood-roasted razor clams

To catch razor clams at low tide, look for two holes – like nostrils – close together in the sand. Squirt salt water into the holes and the clam pops up – grab it quickly before it ducks back down again. Purge in a solution of bicarbonate of soda for 24 hours before using.

Ingredients

  • several handfuls of sea beet
  • about five razor clams per person
  • Quarter  bottle white wine
  • 100 ml olive oil

Method

  1. Scatter the sea beet in the base of a deep roasting tin and place the razor clams in rows on top. Pour over a mix of the wine and olive oil. Season liberally.
  2. Bake in the hottest oven possible (or under a very hot grill) for 2-3 minutes or until the razor clam shells have opened. by Hugh Fearnley-Whittingstall
