Spiced caramelised pineapple with rum
Ingredients
50g (2oz) butter
4tbsp caster sugar
600g (1lb 5oz) pineapple flesh, cut into bite-sized pieces
2-3 star anise
1 cinnamon stick
2-3tbsp dark rum
Cream or ice cream, to serve
The spicy flavours of star anise and cinnamon taste delcious with the sweet pineapple.

Method
Heat the butter in a large frying pan until it starts to foam. Add the sugar, pineapple pieces, star anise and cinnamon stick and stir for 5-6 minutes over a high heat or until the sugar mixture starts to caramelise.
Add the rum and stir to mix well. Cook for 1-2 minutes more, then remove from the heat and serve immediately with a dollop of cream or ice cream.
