Spinach and rocket salad

Ingredients

100g/3½oz baby spinach

100g/3½oz rocket leaves

handful fresh parsley

50g/2oz Parmesan cheese (optional)

For the dressing:

1 clove garlic 2tbsp olive or sunflower oil

1tsp Dijon mustard

1tbsp balsamic vinegar

pinch of sugar


This salad offers a good source of anaemia-protective iron, plus vitamin C, which helps this to be absorbed

Method

1 Wash spinach and rocket leaves, and dry thoroughly, then chop parsley finely and mix with leaves.

2 Crush garlic clove and put into a jar along with rest of dressing ingredients, and shake well till thoroughly mixed. Add dressing to salad and mix well. Shave Parmesan with a potato peeler and scatter over salad.
