We Brits love our tea, so much so that most of us drink it come rain or shine. But in summer it\'s best served long and chilled. Take 60ml of peach puree, 90ml of strong black tea, 15 ml of honey water (or a dollop of runny honey dissolved in warm water) and 15 ml of lemon juice. Shake the mix with ice, then strain and garnish with a slice of white peach and crushed ice. For a less innocent version add 45 ml of Russian standard Gold Vodka.

One of the great pleasures of summer is a day at the races and the traditional drink for such an occasion is the Mint Julep - a US import traditionally drunk at the Kentucky Derby. A traditional julep is made from mint, bourbon, sugar and water. For a twist try combining 1.5oz of Maker\'s mark bourbon, 1.5oz fresh pink grapefruit juice, 1oz honey water with 3 shredded mint leaves. Shake the glass ten times, fill with crushed ice, strain the ingredients into an ice-filled rock glass and garnish with mint.

It\'s a coffee and banana smoothie and takes just 5 minutes to prepare. Add one small banana to 200ml of cold semi-skimmed milk, sprinkle in a teaspoon of Nescafé Green Blend coffee and a pinch of cinnamon. Add three ice cubes one at a time and blend until smooth and creamy. Pour into a tall glass, dust with cinnamon and enjoy.

We rate this recipe from award-winning mixologist Papa Jules - creator of Mahiki Rum. Fill your best jug with: ½ a cucumber (in slices), ½ a lemon, ½ an orange, four strawberries, and one apple; add sprigs of mint and lots of fresh ice. Using a small wine glass pour two measure of rum, four of cloudy apple juice and four of ginger ale. Dash it with Elderflower cordial. And smile and serve!

Take: three slices of fresh Thai ginger, ½ dozen sprigs of mint, ½ dozen sprigs of holy basil, three slices of orange, three slices of cucumber, ¼ oz pimms, some lemonade and muddle the ginger, orange, cucumber with the Pimms, strain into a tall glass with ice and garnish with mint, basil, cucumber and orange.
