Warm potato salad with tomato chilli dressing - serves 4, Prep: 10 mins, Cook: 15-20 mins 500g new potatoes

2 tbsp olive oil
3 cloves garlic, crushed
2-3 tsp paprika
2 red chillies, finely chopped
250ml jar passata
1 tsp sugar
2 tbsp fresh flat leaf parsley, finely chopped

Cook potatoes in boiling salted water for 15-20 mins or till tender. Meanwhile, heat olive oil in a pan and fry garlic, paprika and chilli for 2 mins over a low heat. Add passata and sugar, season well then simmer for 10 mins. Drain potatoes and return to saucepan. Pour over sauce and stir together and serve with parsley.

Pesto with turkey and mushrooms

Serves 4, prep: 7 mins, Cook: 12 mins 

500g tagliatelle
1 tbsp olive oil
250g pack mushrooms, sliced
2 cloves garlic, finely chopped
600g/1 ½ 11b cooked turkey, cut into even-sized pieces
4tbsp green pesto
2 tbsp fresh tarragon finely chopped

Cook pasta according to pack instructions. Meanwhile, heat olive oil in a frying pan. Fry mushrooms for 2-3 mins then add the garlic and turkey, season with sea salt and freshly ground black pepper and cook till heated through. Drain pasta and stir in pesto then add tarragon to turkey mixture and combine with pasta. 

Spinach mash with smoked haddock and poached egg

Serves 4, prep: 10 mins,  cook: 20 mins

750g/11b 11oz  King Edward potatoes, peeled and cut into chunks
4 x 150g/5oz fillets smoked haddock
250g pack baby leaf spinach, washed
4 medium eggs
100ml/3 ½ fl oz hot skimmed milk
2tsp butter

Preheat oven to gas mark 4/180C (170C in a fan oven) Place potatoes in a large pan of slightly boiling water. Cook for 20-25 mins till tender. Meanwhile, place fish on an oiled baking sheet and season well. Bake for 20 mins. Place spinach in a large pan with just water that clings to it, cover and cook over a high heat for 2-3 mins till just wilted. Cool slightly, squeeze out as much water as possible then chop. Poach the eggs in simmering water then remove with a slotted spoon and keep to one side. Drain potatoes, add milk and butter then mash and stir through spinach. Serve the mash topped with the fish then the egg.

Turkey with tomato and cashew nuts

Serves 4, prep 8 mins, cook 10 mins

2 tbsp vegetable oil
2.5cm/1inch piece fresh ginger, peeled and grated
2 clove garlic, sliced
500g/11b 2oz boneless skinless turkey thighs cut into chunks
2tbsp cornflour
3tbsp light soy sauce
250g/9oz dark green cabbage, sliced  
6 spring onions, thinly sliced
50g/2oz cashew nuts
4 plum tomatoes, cut into wedges
2tbsp honey

In a wok heat oil then add ginger and garlic and fry for 1 min. Toss turkey in cornflour and soy sauce and add to wok. Stir fry till browned. Add cabbage, onions and cashew nuts and toss together. Add tomatoes and honey and cook for 4-5 mins till chicken is cooked through. Serve with sweet chilli sauce.

Easy paella

Serves 4, prep 10 mins, Cook 40 mins

Pinch tumeric
900ml/1 ½ pints chicken stock
4 chicken thighs
3 sausages
Large pinch paprika
1 tbsp oil
1 onion, sliced
3 cloves garlic, crushed
1 red pepper, sliced
2 courgettes, sliced
300g/11oz easy cook rice
350ml/12floz tomato pasta sauce
2 tbsp parsley

Dissolve the turmeric in boiling stock. Coat the chicken and sausages with paprika. In a large casserole pot heat the oil add the chicken and sausages and cook till browned. Remove from pan. Fry onions, garlic, pepper and courgettes for 5 mins then add rice and stir. Add tomato sauce and stock and stir. Slice sausages and return to pan with chicken. Bring to the boil then simmer uncovered for 30 mins, stirring occasionally till chicken is cooked through. Sprinkle with parsley.

Quick under the grill pizza

Makes 2, prep 10 mins, cook 5-10 mins

1 large ciabatta, cut in half lenghways
10 tbsp passata
200g can tuna, drained
125g bag mozzarella, sliced
50g can anchovies, drained
75g/3oz asparagus, cooked and drained
75g/3oz black olives, pitted
2 tbsp olive oil

Preheat grill to high. Spread each ciabatta with passata. Top with tuna, mozzarella, anchovies, asparagus and olives. Season well and drizzle with oil. Put under the grill till golden for about 5-10 mins.

Hot three bean salad with sausages

Serves 4, prep 5 mins, cook 5-10 mins

250g/9oz green beans, trimmed
200g/7oz broad beans
3 tbsp olive oil
1-2 tbsp grainy mustard
410g can haricot beans, drained and rinsed
8 herby sausages to serve

Cook the sausages in a hot oven. While there\'re cooking, in a saucepan of boiling salted water cook green and broad beans till tender. In a bowl, mix olive oil with mustard and season well. Drain beans and return to pan with haricot beans. Add dressing and stir to combine. Return to pan and heat through till beans are hot. Serve with cooked juicy sausages.

Home-made turkey burger

Serves 4, prep: 5 mins, cook: 20 mins

450g/11b lean turkey mince
1tsp mixed dried herbs
1 egg, lightly beaten
200g pack salad leaves
4 wholemeal buns, halve and lightly toasted
150g tub fresh salsa

Preheat the grill to medium. In a bowl, mix mince with herbs then mix in the egg to bind it together. Season well then divide mixture into four and shape into burgers. Sit them on a tin lined with tin foil and put under the grill. Cook for about 8mins each side till turkey is cooked through. Serve on bun with salad and salsa.   

Mushrooms with tarragon on toast

Serves 4, Prep: 2 mins, cook: 14 mins

2 tbsp olive oil
250g/9oz chestnut mushrooms
2tbsp fresh tarragon, roughly chopped
2 cloves garlic, peeled and finely chopped
Juice of ½ lemon
150 ml/1/4 pint vegetable stock
4 slices bread, toasted

In a pan heat oil, add mushrooms, and cook over a low heat for 4-5 mins. Add tarragon, garlic, lemon juice and stock. Bring to the boil and cook for a further 5 mins until mushrooms are cooked. Drain the mushrooms and serve on top of toast. Boil the stock so it reduces a little then drizzle a little over. Garnish with tarragon.

Quick turkey Korma

coconut milk,Indian food,Prima,turkey

Serves 4, prep: 10 mins, cook 15-20: mins 

450ml/ ¾ pint chicken stock
1 medium onion finely chopped
2 cloves garlic, finely chopped
1 ½ tsp korma powder
200ml can coconut milk
2tbsp fresh coriander, roughly chopped
350g/12oz Ready cooked turkey

In a frying pan, heat 150ml/ ¼ pint stock and cook onion and garlic for 4-5 mins. Add curry powder and cook for 1 min, stirring continuously. Add remaining stock and coconut milk and simmer for 5 mins then stir through turkey and simmer for another 5 or so mins till the turkey is heated through. Stir through coriander and serve with rice.
