Triple choc-chip cookies
Ingredients
125g/4oz 70 per cent cocoa solids dark chocolate
125g/4oz butter
275g/10oz caster sugar
2 large eggs
1tsp vanilla extract
200g/7oz plain flour
25g/1oz cocoa
1tsp baking soda
75g/3oz milk chocolate chunks
75g/3oz white chocolate chunks
Soft and extra chocolatey for pure enjoyment

Method
Preheat oven to gas mark 3/170°C (160°C in a fan oven). In a heat-proof bowl, melt cocoa solids, chocolate and butter together over a pan of hot water. Cool, then beat in sugar, eggs and vanilla. Fold in remaining ingredients.
Line a baking sheet with baking parchment and drop on mixture, tbsp by tbsp 5cm/2in apart. Bake for 8-10 mins, till cookies are cracked but soft. Cool for 5 mins, then transfer to rack.
