Easy soup recipe
Sauté a chopped onion, carrot and a celery stick in olive oil until golden. Stir a cup of green lentils into the pan with a tin of chopped tomatoes. Fill the can with water and add with a rosemary sprig and a bay leaf. Cover, bring to the boil. Simmer until lentils are tender. Add a vegetable stock cube and more water if it looks thick, with some finely shredded cabbage. Season well and simmer for 5 more minutes. Grate over cheddar to serve.
