Another shockingly simple recipe from allaboutyou cookery guru Emma Marsden
Peel and chop a couple of sweet potatoes and put in a pan. Add a small glass of red lentils and a couple of peeled cloves of garlic. Season well and pour in enough hot chicken or vegetable stock to cover. Cover, bring to the boil then simmer for 15-20 minutes until the potato is soft and lentils have cooked. Purée until smooth, then serve in bowls with a dollop of soured cream, chopped fresh red chilli and squeeze of lemon juice.
