How the CircoTherm system works:
The fan: CircoTherm works by drawing air in from the oven via a powerful fan that heats up the air and forces it back into the oven through holes in the rear wall.
Good circulation: By circulating hot air continuously around the cavity, it reaches the desired temperature quickly and more evenly than in a normal oven, saving both time and energy.
Direct heat: As the hot air is focused directly onto the food, heat is evenly distributed on the shelf positions 1, 3 and 4. Shelf position 2 will have a lower temperature. In fact, a three-course meal can be cooked at the same time, without the flavours intermingling - perfect for dinner parties.
Grill benefits: CircoTherm grilling is the ideal way to cook. There's no need to turn fish, steaks and sausages as the air circulates around the oven, providing an even cooking result.

Neff's senior home economist, Lynn Williams, has created fabulous recipes that make the most of CircoTherm technology for you to try out in your own Neff oven, here is how to make, our favourite, baked risotto with gorgonzola:
Serves 6 (as a starter)
Preparation
Cooking 35 mins
Ingredients:
140g (5oz) sliced pancetta
15g (½oz) unsalted butter
6 small shallots, peeled and finely chopped
2 cloves garlic, crushed
340g (12oz) arborio rice
125ml (¼oz) white wine
1 litre (2 pints) boiling chicken stock
For the topping:
85g (3oz) fresh white breadcrumbs
1 tsp dried oregano
1tbsp dried mixed herbs
170g (6oz) Piccante Gorgonzola, crumbled
Step 1: Place pancetta on a wire rack ovre a universal tray and cook on shelf 1 at 200°C CircoTherm for 10min. Remove from oven and set aside. Turn down the heat to 180°C.
Step 2: Meanwhile, melt butter in a 2-litre (4 pint) flame and ovenproof casserole dish. Add the shallots and swear for 5 min. Stir in the garlic, most of the pancetta (torn into small pieces) and rice, then add the wine and bubble off the alcohol.
Step 3: Add the stock all in one go, then cover and place in the oven on shelf 1. Cook for 15min, until rice is al dente.
Step 4:Mix the breadcrumbs with the herbs and half the Gorgonzola. Spoon this topping over the risotto and scatter with the remaining pancetta and cheese.
Step 5: Switch oven to CircoRoasting 180°C and cook, uncovered, for a further 10min, until the Gorgonzola starts to melt and the crumbs are crisp.
Cook's tip: CircoTherm ensures the rice cooks evenly without sticking or drying out and without needing to be stirred. If your oven doesn't have CircoRoasting, flash the risotto under the grill for a few minutes to melt the cheese and crisp the crumb topping.
