• 250g wooden-boxed Camembert
• 1½tbsp white wine or cider, optional
• 2 thyme sprigs, leaves only to serve
• Spears of steamed tenderstem broccoli (for dipping)
• Chunks of sourdough bread (for dipping)
• Rolls of ham (for dipping)
• Cornichons (for dipping)

Method

1. Preheat oven to 200°C (180°C fan) mark 6. Discard lid of Camembert box and any cloth wrapping. Take cheese out of box and unwrap, leaving it on the waxed paper. Slice off top rind and discard. Return cheese (on its paper), cut-side up to the box and put on a baking sheet.
2. Season with salt and freshly ground black pepper. Sprinkle over the alcohol, if using, and half the thyme. Cook for 15-20min until the cheese is golden on top and melted inside. Transfer box to a board, garnish with remaining thyme and serve with dippers.
