Ingredients

  • 2 medium floury potatoes
  • 1tbsp sunflower oil
  • 3 thyme sprigs
  • A few pinches dried chilli flakes

Method

  1. Preheat oven to 200°C (180°C fan) mark 6 and line a large baking tray with baking parchment. Cut the potatoes (leaving skin on) into chunky wedges and put on to the lined tray.
  2. Add oil, thyme, chilli and seasoning. Toss together using your hands. Cook for 40-50min or until tender. Remove thyme, check seasoning and serve.
