Bake Dr Pierre Dukan's sugar-free, low-fat chocolate cake

Sugar-free low-fat chocolate cake recipe
Preparation: 12 minutes
Cooking: 18-20 minutes
● 6 eggs, separated
● 3 tbsp sweetener
● 30g cocoa powder
● 50g raspberries
● 100g low-fat cream cheese
● 1-2 tbsp skimmed milk
Preheat the oven to 200°C (400°F) Gas Mark 6.
Whisk the egg whites until stiff.
Whisk together the egg yolks, 2 tbsp of the sweetener and 20g of the cocoa powder.
Fold the egg whites into the egg yolk mixture and pour two-thirds of this mixture into an 18cm oval or circular tin.
Drop the raspberries into the middle, then spoon on the remaining mixture.
Bake for 18-20 minutes, until cooked through. Leave to cool in the tin.
For the icing, beat together the remaining sweetener, cocoa powder, cream cheese and enough milk to make a spreading consistency. Spread the icing over the cake and serve.
