  • sprinkling of caster sugar
  • 6 plums, halved
  • 150g/5oz self-raising flour, sieved
  • 1tsp baking powder, sieved
  • 175g/6oz butter, softened, or use soft margarine
  • 175g/6oz caster sugar
  • 2tbsp ground almonds
  • 4 eggs, lightly beaten
  • 2tsp vanilla extract

You will need

  • a 25cm/10in x 15cm/6½ in oblong tin

Method

  1. Preheat oven to gas mark 4/180°C (160°C in a fan oven). Add sugar to a large frying pan along with 2tbsp water. Bring to the boil then reduce to a simmer and add plums, cut side down. Simmer gently for 3 mins.
  2. Spoon plums cut side down into tin, then spoon over a little sugary juice (bubble up again to thicken if needed). Set aside.
  3. Add flour, baking powder, butter, sugar, almonds, eggs and vanilla extract to bowl of a food mixer and beat for 3-4 mins until creamy, then pour over plums. Put in oven and bake for 35-45 mins or until golden and risen (if it starts to colour too much, cover with foil). To test if cooked, poke a skewer into sponge and if it comes out clean it is ready. Remove from oven, leave for 5-10 mins, slice and serve plum side up. Pour over single cream to serve.
