Toffee apple slices

• 3-4 cooking apples (depending on size), peeled, cored and roughly chopped
• juice of ½ lemon
• 225g/8oz porridge oats
• 450g/1Ib plain white flour
• 175g/6oz soft brown sugar
• 1tsp ground ginger (optional)
• 350g/12oz butter, melted
• 310g tub squeezy toffee sauce

Method

1. Preheat oven to gas mark 6/200°C (180°C in a fan oven). Add apples to a pan along with a little water and lemon juice, and simmer gently for a few mins until soft. Mash with a fork and put to one side to cool.
2. Add oats, flour, sugar and ginger, if using, to a large bowl. Pour in melted butter and stir well so it all gets coated.
3. Tip half into tin and flatten out to edges. Squeeze over toffee to cover, then spread over cooled apple. Top with remaining oat mixture and put in oven to bake for about 25-30 mins, or longer if you like it really golden. Leave to cool in tin, then slice into fingers.
