Cook potatoes in a pan of boiling, salted water for about 10-15 mins until tender, then drain really well. When cool enough to handle, slice potatoes and add to a large bowl and leave to cool. Heat oil in a frying pan, add onion and season well with sea salt and freshly ground black pepper. Cook for 2-3 mins until soft, then put to one side and leave to cool.
Add cooled onions to potatoes, add cheese, mix, then add Worcestershire sauce. Taste and adjust seasoning as needed, then add eggs and mix until everything is coated well. Tip this mixture into pie base, roll out remaining pastry, brush edges with egg wash, place top on base and trim and pinch edges together. Make pattern on top using a sharp knife and brush with egg wash (reserve a little – see tip). Put in oven and bake for about 40-45 mins. You will need to cover with foil once pie starts to colour golden.
