  • 450g/1lb shortcrust pastry
  • About 4 medium sized new potatoes, scrubbed or peeled and halved
  • 1tbsp olive oil
  • 1 onion, finely chopped
  • 450g/1lb Red Leicester cheese, grated
  • splash of Worcestershire sauce (more if you like it tangy)
  • 2 eggs, lightly beaten, plus
  • 1 egg, lightly beaten, for egg wash

Method

  1. Preheat oven to gas mark 6/200°C (180°C in a fan oven). Roll half pastry out and use to line tin, neaten and trim and prick base with a fork all over and put in oven for about 10-15 mins until pale golden. Remove and push pastry down in tin if needed and put to one side while you prepare filling (this prevents base being undercooked but you can omit this step and cook pie all in one).
  2. Cook potatoes in a pan of boiling, salted water for about 10-15 mins until tender, then drain really well. When cool enough to handle, slice potatoes and add to a large bowl and leave to cool. Heat oil in a frying pan, add onion and season well with sea salt and freshly ground black pepper. Cook for 2-3 mins until soft, then put to one side and leave to cool.

  3. Add cooled onions to potatoes, add cheese, mix, then add Worcestershire sauce. Taste and adjust seasoning as needed, then add eggs and mix until everything is coated well. Tip this mixture into pie base, roll out remaining pastry, brush edges with egg wash, place top on base and trim and pinch edges together. Make pattern on top using a sharp knife and brush with egg wash (reserve a little – see tip). Put in oven and bake for about 40-45 mins. You will need to cover with foil once pie starts to colour golden.
