Perfect pork loin steaks

• 2 pork loin steaks
• 1tbsp olive oil
• 2 sage leaves, finely chopped

Method

1. Preheat oven to gas mark 6/200°C (180°C in a fan oven). Brush pork with a little oil and season well with sea salt and freshly ground black pepper. Sprinkle with sage leaves.
2. Add remaining oil to a heavy-based frying pan and when hot, add pork. Cook for 2 mins until the underside is golden, then turn and cook for 1-2 mins until the same.
3. Turn off oven, then sit pan in oven (wrap foil around handle if needed) and cook for a further 5-8 mins, then remove and leave to rest for 10 mins before serving.
