Anyone use the smaller cousins of the pumpkin, spaghetti, butternut, and other larger squash?

Just this very afternoon I've been given half a dozen very small, assorted squash, about 4" diameter!  I'm good with big squash of all kinds, many well used and loved recipes, but I'm wondering if anyone has got any suggestions for using the small ones.  They are barely big enough to serve one person, definitely not big enough to serve a single portion of soup, and I'm also beginning to wonder what they will be like inside regarding ratio of seeds to flesh.

At the moment, they are looking very pretty on the kitchen counter as decoration.

Hi, OS, here in France these small squash are stuffed.

The round green ones, like round courgettes, are blanched whole for 10 mins, then refreshed under cold water.

You cut off the tops, scrape out the insides (seeds, membranes), stuff them with anything you like, and put the lids back on.

I have a stuffing here for mozarella cut into cubes, mixed with chopped corianderleaves, s&p and thyme leaves, all mixed with olive oil. fill the courgettes with this, put them in an over dish, and bake at 180C for 10 mins. It says, the cheese will be melted and the courgettes still al dente.

The other orange ones, like Jack Be Little, can be stuffed and baked without the blanching. Just leave them in the oven for up to 30 mins, and perhaps use a meaty stuffing.

If in doubt, experiment! BB

Hi, Bertie Bear, thanks, that is pretty much what I'd thought, stuff them, but had not considered blanching them first.  Probably stuff them with a tomato and lentil mixture, but at the moment they are looking so pretty on my counter top I hate to do anything at the moment.
